Celery Root Salad with Pomegranate & Hazelnuts
Raw celery root is one of our favorite ingredients, with a silky texture when shaved and gently sweet, nutty flavor. At Botanica, we shave it thinly (we use an electric slicer, but a mandoline or a sharp peeler works, too) and pair it with toasted hazelnuts and pomegranate two ways (fresh + molasses!). This is a simple, elegant stunner that will shine on any dinner party table. A word on the pom molasses: We use Just Date’s — made with only pomegranates and dates!

Instructions
Peel the celery root and then shave it as thinly as possible, using a sharp peeler, a mandoline or an electric slicer. In a bowl, combine the shaved celery root, some of the hazelnuts and mint, and dress with a good squeeze of lemon, extra-virgin olive oil, and salt. Transfer to a plate, and scatter with fresh pomegranate seeds and the remaining hazelnuts and mint leaves. In a small bowl, stir together pomegranate molasses and sherry vinegar in a 2:1 ratio (pom:sherry). Drizzle over the salad and finish with plenty of freshly ground black pepper.
